Roughly chop the leaf fat to break it up into smaller pieces.

Place the leaf fat into a sauce pot and heat over low heat. Allow it to render for 4 hours, stirring every hour. Throughout the rendering process, skim the top surface to remove impurities.

Once cooked down, transfer the fat to jars and chill in the refrigerator.
