An easy turkey chili that puts holiday leftovers to work — hearty, warming, and big enough to feed the whole family. Great on its own or loaded with cheese and onions.

    In a large 8-quart pot, heat olive oil on medium-high heat. Add the onions and green peppers, stirring until they are golden, about 5 minutes.

    Add the garlic, chili powder and cumin then stir for 1-2 more minutes.

    Add tomatoes, tomato paste, stock, kidney beans, oregano, salt, pepper and cooked turkey meat. Bring this mixture to a simmer then reduce heat to low. Simmer, partially covered, for an hour.

    Add salt and sugar to taste to balance the acidity of tomatoes and achieve your desired flavor.

    Serve as is or top with shredded cheese, chopped onion, or sour cream.
